French Favorite: Daube Provencal

This beef stew from the south of France is one of my daughter’s absolute favorite dishes. My husband is from France and when we go visit his family in Provence, she will order it every time it is on a menu. This is also a favorite that my husband’s grandmother used to make us all of the time. I won’t lie, it is a bit of an undertaking (especially for me). This daube also takes about 2 1/2-3 hours to cook, plus a about 45 minute prep time. This is not a meal to make if you are short on time. But when you do have the time, it is so worth it!!



INGREDIENTS

This Recipe is from Cooks Illustrated

¾ ounce dried porcini mushrooms, rinsed

3 ½ pound boneless beef chuck-eye roast, trimmed of excess fat and cut into 2-inch chunks

1 ½ teaspoons table salt

1 teaspoon ground black pepper

4 tablespoons olive oil

5 ounces Salt pork, rind removed

4 large carrots, peeled and cut into 1-inch rounds (about 2 cups)

2 medium onions, halved and cut into 1/8-inch-thick slices (about 4 cups)

4 medium cloves garlic, sliced thin

2 tablespoons tomato paste

⅓ cup all-purpose flour

1 bottle red wine (bold, such as a Cabernet)

1 cup low-sodium chicken broth

1 cup water

4 strips orange zest (from one orange), removed with vegetable peeler, each strip about 3 inches long, cleaned of white pith, and cut lengthwise into thin strips

1 cup niçoise olives, pitted and drained well

3 anchovy fillets, minced (about 1 teaspoon)

5 sprigs fresh thyme, tied together with kitchen twine

2 bay leaves

1 can (14 1/2 ounces) whole tomatoes,

drained and cut into 1/2-inch dice

2 tablespoons minced fresh parsley leaves

BEFORE YOU BEGIN

Serve this French beef stew with egg noodles or boiled potatoes. If niçoise olives are not available, kalamata olives, though not authentic, can be substituted. Cabernet Sauvignon is our favorite wine for this recipe, but Côtes du Rhône and Zinfandel also work. Our favorite cut of beef for this recipe is chuck-eye roast, but any boneless roast from the chuck will work. Because the tomatoes are added just before serving, it is preferable to use canned whole tomatoes and dice them yourself--uncooked, they are more tender than canned diced tomatoes. Once the salt pork, thyme, and bay leaves are removed in step 4, the daube can be cooled and refrigerated in an airtight container for up to 4 days. Before reheating, skim the hardened fat from the surface, then continue with the recipe.

INSTRUCTIONS

Cover mushrooms with 1 cup hot tap water in small microwave-safe bowl; cover with plastic wrap, cut several steam vents in plastic with paring knife, and microwave on high power for 30 seconds. Let stand until mushrooms soften, about 5 minutes. Lift mushrooms from liquid with fork and chop into 1/2-inch pieces (you should have about 4 tablespoons). Strain liquid through fine-mesh strainer lined with 1 paper towel into medium bowl. Set mushrooms and liquid aside.

Adjust oven rack to lower-middle position; heat oven to 325 degrees. Dry beef thoroughly with paper towels, then season with salt and pepper. Heat 2 tablespoons oil in large heavy-bottomed Dutch oven over medium-high heat until shimmering but not smoking; add half of beef. Cook without moving pieces until well browned, about 2 minutes on each side, for total of 8 to 10 minutes, reducing heat if fat begins to smoke. Transfer meat to medium bowl. Repeat with remaining oil and remaining meat.

Reduce heat to medium and add salt pork, carrots, onions, garlic, and tomato paste to now-empty pot; cook, stirring occasionally, until light brown, about 2 minutes. Stir in flour and cook, stirring constantly, about 1 minute. Slowly add wine, gently scraping pan bottom to loosen browned bits. Add broth, water, beef, and any juices in bowl. Increase heat to medium-high and bring to full simmer. Add mushrooms and their liquid, orange zest, 1/2 cup olives, anchovies, thyme, and bay, distributing evenly and arranging beef so it is completely covered by liquid; cover partially and place in oven. Cook until fork inserted in beef meets little resistance (meat should not be falling apart), 2 1/2 to 3 hours.

Discard salt pork, thyme, and bay leaves. Add tomatoes and remaining 1/2 cup olives; warm over medium-high heat until heated through, about 1 minute. Cover pot and allow stew to settle, about 5 minutes. Using spoon, skim excess fat from surface of stew. Stir in parsley and serve.

Happy Sunday 🇺🇸Happy Almost 4th of July. Posting this image still feels surreal. Thank you beyond words @bostonmagazine 🖤! In the past week I have been asked a few times how I got into Barre in the first place. Here is how it happened: I found barre by what felt like an accident but was actually serendipity. I had just moved from Boston to the Marina neighborhood of San Francisco in 2001. I moved to San Francisco to be with my boyfriend, Charles Diaz 😂. I was exploring my new city when I came across a charming looking store or yoga studio, I really had no idea what it was… but the sign in front read “Bar Method”. What caught my eye even more than the first boutique fitness studio I had ever laid eyes on was the woman standing in front. I struck up a conversation with none other than the awe-inspiring owner herself, Burr Leonard, an embodiment of timeless grace and strength, despite being in her late 50s. Her youthful energy, toned physique and the passion in her voice as she explained what her new fitness studio offered, compelled me to give this unknown world of barre a try. Little did I know that this chance encounter would lead me on a transformative journey. It was a decision that not only reshaped my body but also ignited a spark within me. I had never in my then 22 years of life ever enjoyed exercise until I found barre fitness. I have consistently been doing barre weekly since my first class 24 years ago and started teaching Barre Classes 10 years ago. This has not been a quick journey, but it sure has been an incredible one. As any fitness instructor knows, it is not just the hour you are teaching in front of your class, it is the hours and hours of putting classes together. There is so much behind the scenes work. It has been a lot of work, yes, but it has been so worth every hour and every person I have met through doing what I love. 🌈💜💚❤️☀️ Today's June weather might have been an example of exactly why the old adage was created: "If you don't like the weather in New England, wait a minute." I think we went through every type of weather in the last 12 hours! But perhaps, it's the perfect metaphor and tribute to June - a month that celebrates the love of uniqueness and diversity. As we wrap up the last week of June, a month that celebrates and honors diversity, individuality, and the courage of every person to openly live as their authentic selves, let's also be reminded that just like the weather, it is uniqueness and differentiation that makes life as vibrant and amazing as it is. In essence, we all symbolize the power and beauty of differentiation. Each one of us carries a unique blend of influences - worldly and ethereal, seen and unseen. This is what adds depth and richness to life. Embracing our unique qualities isn't just empowering, it's how we were meant to live.... as we are inherently designed, as we were born to be. Happy Father’s Day! What I had no idea about when I experienced love at first sight in the dining hall at Syracuse University at 18 years old, was that the person I was going to spend my life with would also be the most amazing dad. He has shown that to us in a thousand ways through all the little moments and adventures with which he has filled our lives. I truly don’t think I ever could have imagined the amazing role models my kids would have, not only in their dad, but also in their incredible uncles and the men in our family! 😂😂 Charles is not going to love that I posted all these pictures of him ….but I think its a pretty fair payback from this morning. I opened the fridge and saw this plastic clear container, I thought ooh 😂 how sweet he got me a treat, like a pastry or cake. Well no, it was sea worms, wiggling all around for fishing. 😂😂😂😂😡 not at all what you want to be surprised with first thing in the morning😂!! Happy Fathers Day!! #happyfathersday
